Two selected plots, one plot of 0.7 hectares of Pinot Noir in Fuenterrobles at 750m altitude and second plot of 0.5 hectares of Garnacha in Siete Aguas at 879m altitude, both in the province of Valencia. Vinified separately.
Pinot Noir pressed directly to obtain flower must and fermentation at 14ºC.
Garnacha, pre-fermentative cold maceration, and later fermentation in a wooden barrel of 6,500lts.
